This is a great option to replace rice and reduce carbs in recipes such as curry’s and stir-fry.
Ingredients:
½ head cauliflower, floreted
½ head broccoli, floreted
1tbsp cold-pressed extra-virgin olive oil
¼ bunch coriander
Salt and pepper to taste.

Add chicken and vegetables to a slow cooker.

Add all sauce ingredients to a blender and blend until well combined

Pour sauce into slow cooker, cover and cook on low for 4 hours
To make the cauliflower and broccoli rice pulse the cauliflower and broccoli together in a food processor until it resembles rice.
In a large fry pan or wok, heat the oil and saute the cauliflower and broccoli rice for 4-5 min.
Serve the satay on top of the rice and season with fresh corriander.
